A popular recipe for halibut. Leave a can of beer open overnight or for a few hours at least. Cut halibut filet into small chunks (the fresher, the better). Slowly pour stale beer into Krusteaz Pancake Batter or batter of your choice until a thick consistency for coating. Sprinkle garlic, onion, lemon pepper and paprika into batter while mixing. Dip halibut chunks into batter and deep fry until golden brown. Meat should be white and flaky, not dry. Oil should be about 375 degrees. If the batter is too hot, the outside will burn and the inside will still be transparent and raw. Make enough to go around. It goes fast. Serve with a fresh salad from the garden and strawberry/rhubarb pie for dessert, or maybe some wild blueberry cobbler. Enjoy!
