my son's school project

Help anyone! My second grader has been given a project where he has researched a state - Colorado. He needs to bring in food representing the state and has to make a mini-float for the state. I have looked on the state website and found out about the mountains, dinosaurs, the state flower, animal and such. He can represent all of that. The sports teams he could include. Anything else? I would appreciate it. Send me websites he may be able to look at and find out the info himself.
