Ticos are not big eaters of greens, and salad is usually a disappointing affair, consisting of some grated cabbage and carrot in vinegar topped with a tomato. Wherever you eat, your table with usually have a big jar of curtido (pickled vegetables and chilies) to mix with your food. Rice is often cooked with garlic and/or red pepper, and sometimes achiote, a traditional red food coloring prepared from a native plant.
