Hi George, This is my recipe for Kleftico:
Firstly, Kleftico is all about the cooking, the longer the cooking time the better the kleftico.
1. Buy Lamb shoulder from the butcher, however many pieces you wish.
2. Wash the meat and place in a deep baking dish, either the silver ones or what i do is cook it in a clay baking dish.*
*This is because kleftico tastes a hundred times better if cooked in a clay oven, i don't have one so i cook the meat in a clay baking dish instead.
3. For 6-8 pieces of meat, cut a large onion and a large tomato in to eighths and scatter over the meat.
4. Add cold water to the dish, enough to generously cover the base of dish about 1 inch in depth.
5. Place 3 bay leaves randomly in between the lamb, sprinkle oregano over the lamb, add salt and pepper.
6. Finally, this is optional as it is something that i add.... a teaspoon of bisto just to give a richer taste in the juice.
7. Cover with foil or the clay lid and place in a pre-heated oven 140 deg f for approximately 5-6 hours. Check every so often if water is needed add a little.
