Although I certainly couldn't provide you with the recipe, Greenlandics like to chew whale blubber on Christmas Eve. Apparently it tastes like coconut. They also drink a lot of coffee, and eat pastries. I know they are big on fish there-maybe google "fish of the north Atlantic" and there might be something like halibut that you could prepare. They also might eat caribou sausage- maybe a speciality or gourmet store in your area might have this. Surprisingly, Greenlandics are big on Thai food. If you know a local Thai restaurant, you could bring a Thai dish into school. Other customs in Greenland include using driftwood and wild heather and decorating it as a Christmas tree (although more and more Greenlandics are importing trees now). Since it is pretty much dark 24/7 in December there, they light stars to place in their windows. Most towns have a giant Christmas tree in their square. It is customary on Christmas and Christmas Eve for women to receive special treatment, men often bring them their food. An interesting custom in Greenland is for children to send their letters to Santa's house in Umanaaq. The house is a traditional Greenland turf house, but is painted bright colors. Inside is a giant bed custom made for Santa, and a mailbox for children to place their letters in. This house was used in a Denmark Christmas special, they possibly might have it on Amazon. On Christmas, people often wear their best native close-embroidered sealskin boots, eleaborate sealskin coats, etc. Google "Greenland National Costume" and you'll see what I mean. I hope this helps, I found most of this info just by googling it. Enchantment of the World also put out a book on Greenland, which, if I remember correctly, had a brief section on Christmas in Greenland.
