Hello:

In my youth in the mid 80's, I worked as a waitress in a mexican resteraunt in San Clemente California called Cafe Del Coyote. They served a dish called Chile Colorado. Tick, deep reddish brown, spicy, robust, complex and ..... a litte sweet, (sweetness reminded me a little bit of barbeque sauce flavor).

The flavor of this dish has haunted me all these years. I have researched chile colorado and have found many recipes most of which share common ingredients, but none of them contained anything sweet. I know that the traditional dish varies regionally, does anyone know the one with the added sweetness or what the ingredients might be?

Unfortunately the resteraunt is no longer in business and I cant trace the chef.

I wouldbe grateful for any info. Thank you.
