If you are going to Nicaragua and want to study Spanish, we are strongly recommending Viva Spanish School in Managua. Cindy and I studied there for two weeks and just got back to the US. They were great and we learned mucho espanol in a short amount of time. Check out the volcano in Masaya and check out Granada (a bit touristy, but nice). Suggest taking buses and not driving unless you dont mind crazy drivers and police asking for bribes. Have fun!
