Is there a special recipe I should know about to make fried bananas like the do in the Philippines? I have seen pictures and I have a friend that talks about her mom in the Philippines making them.

Yum yum, fried bananas, my favorite! Here's a Philippine recipe that I found:

2 bananas, firm but ripe

4 tbsps unsalted butter

4 tsps fresh lime juice

2 tbsps honey

lightly whipped cream to serve

Cut each banana in half lengthways then in half crossways.

Melt the butter in a non stick frying pan over a medium heat.As soon as it has melted increase the heat and add the bananas. Fry quickly on both sides until lightly browned. This should take 1-2 minutes. Remove with a slotted spoon and divide between bowls.

Spoon the lime juice over the top and then the honey. Serve immedietely with a dollop of cream

In Costa Rica I always loved fried Platinos. Platinos look like banasas... but raw are very hard and very bitter (and I hear will turn your teeth black if you actually could chew on one). Fried they are sweet and tasty!

I think they would be tremendous in this recipe.

I think that the filipinos use plantains too. They have bananas and plantains I think. I have never tried a plantain. What is the difference between it and a banana besides the size? Does one taste sweeter?

First the Platino absolutely must be cooked. There are different methods... the frying makes a soft, sweet food. There is another method where they are smushed and are dry and not very tasty (similar to Bread Fruit if you are familiar with that).

The Plantinos look almost like Bananas but maybe a little larger. When they are ready the skin had many many brown spots, maybe almost completely brown. A Banana that looked that like would be practically mush inside. At that point the raw Platino is still hard like a green Banana (and tastes worse than a green Banana).
