Hi, My late Mother used to make 2 types of zganci. A yellow crumbly one made from corn meal and served with a tomato sauce or with fried onions and bacon. And we have this quite often. The other she called gray zganci and I think may have been made with buckwheat. It too was crumbly and was served with bacon bits and bacon drippings. Would like a copy of auch a recipe if anyone has one. And thanks. Robert F klemens

We used to make a breakfast Zgance which was similar to crumbled up pancakes and we ate it with coffee and milk. I remember there were a BUNCH of eggs in it and the eggs were separated. It was a sweet kind of thick dough that was stirred and broken un in the frying pan. Does anyone have a recipe?

Hi, I too have been looking for a recipe for Zganci, served with Coffee & Milk. I think I found one its from "Women's Glory-The Kitchen" published by Slovenian Women's Union of America, 1963. Slovenian Egg Pancakes 2 cups sifted flour 1/2 tsp. salt 1 tablespoon sugar 3 well beaten eggs 4 cups of milk Mix and sift dry ingredients. Combine eggs and mild; ad four mixture, beating until smooth. Bake quickly in greased hot frying an cooking one large cake at a time, or on a special griddle, containing severalsmall cakemolds. Spread with jam and pile one on another. Re-heat, dust with powdered sugar and cut in wedge-shaped pieces. submitted by Betty Matjasic, Bedford Hgts., Ohio I haven't tried this recipe yet. I plan to put it in the frying pan and to keep pulling it apart with a fork like by grandmother did, then serve it in a bowl with coffee, milk and sugar. Good luck!

Here is my mother/grandmother's recipe for Zganci..we ate it with coffee and milk. My grandmother also made something similiar with cornmeal and we would eat that with saurekraut. Zganci 3 Eggs 1/4 cup sugar salt 2 cups water Flour enough to make thin batter 2 large tbsp. lard (or Crisco) heated to smoking. The batter was poured into the pan and chopped up as it cooked so it formed small "dumplings".
