Hi, I used to live in Zimababwe and on a number of occasions I ate with some of the locals, it was a dish I'm almost sure they called "Rape". As far as I could make out, the ingredients included spinach, onion, tomato and "ration" meat. It was fantastic, but I can't seem to recreate it.
Any help appreciated.
depending on where you live e.g here in the UK you can buy the rape vegetable from the market they call it saag.depending on how you want to cook the meal either mixed tgr with meat , rape veg, onion and tomatoes.the ingredients are as follows although it differs with pple:
choice of meat/lamb
salt
maggie seasoning
rape veg
cooking oil
onions
tomatoes
tomatoe puree' -optional
boil meat with salt , onion and maggie cubes til tender.
when meat is tender according to your liking , drain the stock and put aside.
fry the meat until brown and don't burn.
add chopped onions and fry for a few mins till onions are soft and then add chopped tomatoes , pinch of salt , maggie cubes and leave to simmer for a further 10-15 mins
blanch the rape veg in salted boiled water for a few mins
drain the water from the veg and add to the meat and tomatoe sauce.
depending on the thickness you want you can add a bit of puree' and some little bit of meat stock into the meat and veg stew , simmer for a further 10 mins.taste seasoning.
serve with either sadza , ground rice , semolina or polenta.
